Description

These Piri Piri Chicken Drumsticks are a spicy, flavorful dish that’s perfect for grilling or baking. Marinated in a vibrant garlic and chili sauce, these drumsticks are sure to be a hit at any dinner table!


Ingredients

  • 1.5 kg chicken drumsticks
  • 8 garlic cloves, peeled
  • 3 red chillies (not the tiny, gnarled ones)
  • 1 lemon (zest and juice)
  • 1/2 cup oil
  • 2 teaspoons smoked paprika
  • Salt and pepper (to taste)
  • 2 bay leaves
  • Fresh parsley or coriander (for serving)

Instructions

  • Make marinade: Place garlic, chillies, lemon zest, lemon juice, oil, and smoked paprika in a food processor. Blitz until smooth. Season with salt and pepper. Divide the sauce; marinate the chicken in two-thirds of the sauce (reserve the remaining sauce for serving). Add bay leaves. Marinate for 2-4 hours (or overnight).
  • Preheat oven: Preheat the oven to 230°C (446°F).
  • Bake: Place chicken drumsticks on a tray and bake for 30 minutes.
  • Grill: Grill under a hot grill until caramelized, about 5-10 minutes.
  • Serve: Serve with extra Piri Piri sauce, lemon wedges, and fresh parsley or coriander.
