These Piri Piri Chicken Drumsticks are a spicy, flavorful dish that’s perfect for grilling or baking. Marinated in a vibrant garlic and chili sauce, these drumsticks are sure to be a hit at any dinner table!

- 1.5 kg chicken drumsticks
- 8 garlic cloves, peeled
- 3 red chillies (not the tiny, gnarled ones)
- 1 lemon (zest and juice)
- 1/2 cup oil
- 2 teaspoons smoked paprika
- Salt and pepper (to taste)
- 2 bay leaves
- Fresh parsley or coriander (for serving)
Instructions
- Make marinade: Place garlic, chillies, lemon zest, lemon juice, oil, and smoked paprika in a food processor. Blitz until smooth. Season with salt and pepper. Divide the sauce; marinate the chicken in two-thirds of the sauce (reserve the remaining sauce for serving). Add bay leaves. Marinate for 2-4 hours (or overnight).
- Preheat oven: Preheat the oven to 230°C (446°F).
- Bake: Place chicken drumsticks on a tray and bake for 30 minutes.
- Grill: Grill under a hot grill until caramelized, about 5-10 minutes.
- Serve: Serve with extra Piri Piri sauce, lemon wedges, and fresh parsley or coriander.

- For extra flavor, consider adding a splash of vinegar to the marinade.
