Description

These Pistachio Cookies are a delicious treat with a perfect balance of nutty pistachios and a soft, chewy texture. The vibrant green color adds a fun touch, while the rich flavor of roasted pistachios makes these cookies irresistible. Whether you enjoy them with a cup of tea or as an after-dinner treat, they’re sure to become a favorite!

Ingredients

Scale
  • 1 cup unsalted butter, softened

  • 3/4 cup granulated sugar

  • 1/2 cup packed brown sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup shelled pistachios, roughly chopped

  • 1/2 cup white chocolate chips (optional, for added sweetness)

Instructions

  1. 1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

    2. Prepare the Cookie Dough:

    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.

    • Add the egg and vanilla extract, and beat until fully combined.

    3. Mix the Dry Ingredients:

    • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.

    4. Add Pistachios and Chocolate Chips:

    • Fold in the chopped pistachios and white chocolate chips (if using). Stir until evenly distributed throughout the dough.

    5. Shape the Cookies:

    • Use a cookie scoop or tablespoon to scoop dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.

    • Gently press the dough balls down to slightly flatten them, if desired.

    6. Bake the Cookies:

    • Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden brown. The centers may still appear soft, but they will firm up as the cookies cool.

    7. Cool and Serve:

    • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

    • Enjoy with a cup of coffee or tea!

Notes

  • If you prefer a crunchier cookie, you can bake the cookies for an extra minute or two.

  • You can substitute pistachios with other nuts like almonds or walnuts if desired.

  • For a richer flavor, consider roasting the pistachios before adding them to the dough.

  • The white chocolate chips are optional but add a nice creamy sweetness that pairs well with the pistachios.
