Description

Ingredients

  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Add the vanilla extract and mix until well combined.
  • Gradually add the flour, salt, and chopped pistachios to the butter mixture, stirring until a dough forms.
  • Shape the dough into a log, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Once chilled, slice the dough into 1/4-inch rounds and place them on the prepared baking sheet.
  • Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
