Description

A fun fusion dish combining the flavors of pizza and enchiladas, featuring tortillas filled with cheese, pepperoni, and pizza sauce, baked until bubbly and delicious.


Ingredients

  • 8 large flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1 cup sliced pepperoni
  • 1 1/2 cups pizza sauce
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped green bell pepper (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spread about 1/2 cup of pizza sauce evenly on the bottom of a 9×13-inch baking dish.
  3. On each tortilla, spread a thin layer of pizza sauce, then sprinkle with mozzarella cheese, pepperoni, olives, and green bell pepper.
  4. Roll up each tortilla tightly and place seam-side down in the baking dish.
  5. Pour the remaining pizza sauce evenly over the rolled tortillas.
  6. Sprinkle the top with remaining mozzarella cheese, oregano, and garlic powder.
  7. Bake uncovered for 20-25 minutes, until cheese is melted and bubbly.
  8. Garnish with fresh basil or parsley before serving.
