Ingredients

  • 1 lb sausage, crumbled
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (28 oz) crushed tomatoes
  • 3 cups chicken or vegetable broth
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup pepperoni slices
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  • Cook Sausage:
    In a large pot, brown the crumbled sausage over medium heat until fully cooked. Drain any excess fat.
  • Sauté Vegetables:
    Add the chopped onion, minced garlic, and diced bell pepper to the pot. Sauté until the vegetables are softened, about 5 minutes.
  • Add Tomatoes and Broth:
    Stir in the crushed tomatoes, chicken or vegetable broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes.
  • Add Toppings:
    Stir in the pepperoni slices and half of the shredded mozzarella cheese. Continue cooking until the cheese has melted.
  • Serve:
    Ladle the soup into bowls, top with the remaining mozzarella cheese, and garnish with fresh basil. Enjoy!
