  • 1 baguette (cut into 1/2-inch slices)
  • 2 tbsp olive oil (for brushing)
  • 1 tsp garlic powder (optional)

  • 8 oz brie cheese, sliced
  • ½ cup pomegranate seeds
  • 2 tbsp honey (for drizzling)
  • 1 tbsp fresh thyme leaves (optional, for garnish)
  • Salt and freshly ground black pepper, to taste

Instructions

1. Prepare the crostini:

  • Preheat the oven to 375°F (190°C).
  • Arrange the baguette slices on a baking sheet and brush each slice with olive oil. Optionally, sprinkle the slices with garlic powder.
  • Bake for 8-10 minutes or until the crostini are golden brown and crispy. Remove from the oven and let them cool slightly.

2. Assemble the crostini:

  • Place a slice of brie on each toasted baguette slice. The warmth of the crostini will soften the brie.
  • Top with a generous spoonful of pomegranate seeds.

3. Drizzle and garnish:

  • Drizzle each crostini with honey for added sweetness and richness.
  • Sprinkle with fresh thyme leaves and season with a pinch of salt and freshly ground black pepper.

Notes

  • If you’re preparing these ahead of time, assemble the crostini (without the honey) and store them in the refrigerator. Drizzle with honey and garnish just before serving to keep the crostini crisp.
