This Poor Man’s Prime Rib is an affordable alternative to the traditional prime rib roast but still packed with flavor. Using a cheaper cut of beef, this recipe gives you that tender, juicy prime rib experience without breaking the bank. Ingredients
- 3–4 pounds boneless chuck roast (or another affordable beef roast cut)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
For the Gravy (optional):
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- Salt and pepper to taste

Preheat the oven:
Preheat your oven to 450°F (230°C). Place the rack in the center of the oven. -
Prepare the roast:
Pat the roast dry with paper towels. This helps achieve a better sear and crust on the roast.
Rub the entire roast with olive oil, making sure it’s evenly coated. Season generously with salt and pepper on all sides. -
Make the seasoning rub:
In a small bowl, combine the minced garlic, rosemary, thyme, Dijon mustard, and Worcestershire sauce. Stir to form a paste. Rub this mixture all over the roast, covering it evenly. -
Roast the beef:
Place the roast in a roasting pan or on a rimmed baking sheet. Put it in the oven and roast at 450°F for 15 minutes to sear the outside of the roast. -
Lower the temperature:
After the first 15 minutes, reduce the oven temperature to 325°F (163°C). Continue roasting for about 1.5 to 2 hours, or until the roast reaches your desired doneness (use a meat thermometer for best results). For medium-rare, aim for an internal temperature of 130°F-135°F. For medium, go for 140°F-145°F. -
Rest the roast:
Once the roast reaches your desired doneness, remove it from the oven and let it rest for at least 15 minutes before slicing. This helps the juices redistribute throughout the meat, ensuring a tender roast. -
Make the gravy (optional):
While the roast is resting, make the gravy if desired. In a small saucepan, melt the butter over medium heat. Add the flour and whisk to create a roux, cooking for about 1 minute. Slowly add the beef broth, whisking constantly until the mixture thickens and becomes smooth. Season with salt and pepper to taste. -
Serve:

- For a richer flavor, you can add a splash of red wine to the gravy after adding the beef broth.
