Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup grated cheddar cheese
  • 1 tbsp poppy seeds
  • 1/2 cup butter, melted
  • 1 cup crushed crackers (such as Ritz crackers)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Place the chicken breasts in the prepared baking dish. Season with salt and pepper.
  3. In a medium bowl, mix the cream of chicken soup and sour cream until well combined. Pour the mixture over the chicken breasts, spreading it evenly.
  4. Sprinkle the grated cheddar cheese and poppy seeds over the top of the soup mixture.
  5. In a separate bowl, combine the melted butter and crushed crackers. Sprinkle the cracker mixture evenly over the top of the chicken and sauce.
  6. Bake for 35–40 minutes, or until the chicken is fully cooked and the top is golden and bubbly.
  7. Let the dish cool for a few minutes before serving. Serve hot.

Notes

  • For a lighter version, you can use a reduced-fat sour cream and cream of chicken soup.
  • Serve this dish with rice, mashed potatoes, or steamed vegetables for a complete meal.
  • If you prefer a more crispy topping, broil the dish for the last 2–3 minutes of baking.
