Description

A flavorful and spicy grilled chicken dish inspired by traditional Portuguese cuisine, marinated in a zesty piri-piri sauce made with garlic, lemon, and chili.


Ingredients

  • 1 whole chicken (about 3.54 lbs), butterflied or cut into pieces
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp red wine vinegar
  • 4 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 12 fresh red chilies (or 1 tsp chili flakes), finely chopped
  • Salt and black pepper to taste
  • Optional: 1 tsp honey (for a touch of sweetness)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, vinegar, garlic, paprika, oregano, chilies, salt, pepper, and honey if using.
  2. Rub the marinade all over the chicken, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat. Oil the grates to prevent sticking.
  4. Grill the chicken skin-side down first, for 5–7 minutes. Flip and continue cooking, turning occasionally, for 25–30 minutes or until internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for 5–10 minutes before serving. Garnish with lemon wedges or fresh herbs if desired.

Notes

  • Can be cooked in the oven at 400°F (200°C) if grilling is not an option.
  • Adjust chili quantity based on heat preference.
  • Butterflying the chicken helps it cook more evenly on the grill.
