Description
Potato Galette is a crispy, cheesy, and flavorful side dish made with layers of thinly sliced Yukon gold potatoes, butter, olive oil, and gruyère cheese. It’s simple to prepare and perfect for a special meal!

- 7–8 medium Yukon gold potatoes
- 3 tbsp butter, melted
- 2 tbsp olive oil
- 1 ¼ cups gruyère cheese, shredded
- Parmigiano cheese, to taste
- Seasoned salt and black pepper, to taste (potatoes need a lot of seasoning)
- 1 8-inch cast iron skillet
- Parchment paper square
Instructions
- Prepare the Potatoes: Thinly slice the potatoes using a mandolin slicer. Remove any excess moisture from the potatoes by patting them dry with a paper towel.
- Preheat the Skillet: Heat the cast iron skillet over medium-high heat and add 2 tablespoons of olive oil.
- Season the Potatoes: In a bowl, toss the sliced potatoes with the melted butter, seasoned salt, and black pepper.
- Layer the Potatoes: Start layering the potatoes in the center of the skillet, overlapping slightly. After each layer of potatoes, sprinkle with some gruyère cheese. Continue layering for 6-7 layers, making sure the top layer is just potatoes, not cheese.
- Cook on the Stovetop: Cover the top of the potatoes with parchment paper and place something heavy on top (such as another pan or a heatproof object). Cook on medium-high heat for 7-8 minutes to help set the layers.
- Bake: Preheat the oven to 400°F (200°C). Remove the parchment paper from the skillet and transfer the skillet to the oven. Bake for about 55 minutes until the potatoes are crispy and golden.
- Finish and Serve: After baking, cover the potatoes with parchment paper again and carefully flip the galette onto a cutting board. Sprinkle with flaky sea salt, chives, and freshly ground black pepper. Slice into triangles and serve.
Notes
- Layering Tip: Make sure the top layer of the galette is only potatoes, without any cheese, to allow it to crisp up properly.
- Season Generously: Potatoes require ample seasoning for flavor, so don’t hesitate to add more salt and pepper.
- Make Ahead: You can prepare the galette the day before and store it in the fridge, then bake it just before serving.
