Description

This Potato, Goat Cheese, and Artichoke Quiche is a deliciously savory dish that’s perfect for brunch, lunch, or a light dinner. The creamy goat cheese, tender potatoes, and earthy artichokes combine to create a rich and satisfying quiche that everyone will love.

  • 1 pre-made pie crust (or homemade if preferred)
  • 2 medium potatoes, peeled and thinly sliced
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1/2 cup goat cheese, crumbled
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 4 large eggs
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil (for cooking)
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
  3. Add the thinly sliced potatoes to the skillet and cook for an additional 5-7 minutes, until they start to soften but are not fully cooked. Season with salt, pepper, thyme, and garlic powder. Remove from heat and set aside.
  4. In a large bowl, whisk together the eggs and heavy cream until smooth. Season with a pinch of salt and pepper.
  5. Add the chopped artichoke hearts, sautéed onions and potatoes, and crumbled goat cheese into the egg mixture. Stir gently to combine.
  6. Pour the mixture into the prepared pie crust, spreading it evenly.
  7. Bake for 35-40 minutes, or until the quiche is set in the center and golden brown on top. You can check for doneness by inserting a knife into the center—it should come out clean.
  8. Allow the quiche to cool for a few minutes before slicing. Garnish with fresh parsley, if desired.
  9. Serve warm or at room temperature.

Notes

  • You can use frozen artichoke hearts instead of canned ones if preferred. Just make sure to thaw and drain them properly.
  • Feel free to swap the goat cheese with feta or cream cheese if desired.
  • This quiche can be made ahead and stored in the refrigerator for up to 2 days. Reheat in the oven before serving
