- 1 pre-made pie crust (or homemade if preferred)
- 2 medium potatoes, peeled and thinly sliced
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1/2 cup goat cheese, crumbled
- 1 cup heavy cream (or half-and-half for a lighter version)
- 4 large eggs
- 1 small onion, finely chopped
- 2 tablespoons olive oil (for cooking)
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
- Add the thinly sliced potatoes to the skillet and cook for an additional 5-7 minutes, until they start to soften but are not fully cooked. Season with salt, pepper, thyme, and garlic powder. Remove from heat and set aside.
- In a large bowl, whisk together the eggs and heavy cream until smooth. Season with a pinch of salt and pepper.
- Add the chopped artichoke hearts, sautéed onions and potatoes, and crumbled goat cheese into the egg mixture. Stir gently to combine.
- Pour the mixture into the prepared pie crust, spreading it evenly.
- Bake for 35-40 minutes, or until the quiche is set in the center and golden brown on top. You can check for doneness by inserting a knife into the center—it should come out clean.
- Allow the quiche to cool for a few minutes before slicing. Garnish with fresh parsley, if desired.
- Serve warm or at room temperature.
Notes
- You can use frozen artichoke hearts instead of canned ones if preferred. Just make sure to thaw and drain them properly.
- Feel free to swap the goat cheese with feta or cream cheese if desired.
- This quiche can be made ahead and stored in the refrigerator for up to 2 days. Reheat in the oven before serving
