Ingredients
Scale
- 4 large russet potatoes, peeled and grated
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 small onion, finely chopped
- 2 tbsp butter, melted
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh chives (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the grated potatoes, sour cream, cheddar cheese, Parmesan cheese, onion, melted butter, garlic powder, salt, and pepper. Stir until well combined.
- Transfer the mixture to the prepared baking dish, spreading it out evenly.
- Bake for 40–45 minutes, or until the top is golden brown and the potatoes are tender.
- Let cool for a few minutes, then garnish with chopped chives if desired. Serve hot.
Notes
- For an extra cheesy dish, you can add more cheddar cheese on top before baking.
- Make sure to drain any excess moisture from the grated potatoes to prevent a soggy dish.
- This dish can be prepared ahead of time and baked just before serving.
- For a richer flavor, try using a mix of sour cream and heavy cream.
