Ingredients

Scale
  • 4 large russet potatoes, peeled and grated
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 small onion, finely chopped
  • 2 tbsp butter, melted
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh chives (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the grated potatoes, sour cream, cheddar cheese, Parmesan cheese, onion, melted butter, garlic powder, salt, and pepper. Stir until well combined.
  3. Transfer the mixture to the prepared baking dish, spreading it out evenly.
  4. Bake for 40–45 minutes, or until the top is golden brown and the potatoes are tender.
  5. Let cool for a few minutes, then garnish with chopped chives if desired. Serve hot.

Notes

  • For an extra cheesy dish, you can add more cheddar cheese on top before baking.
  • Make sure to drain any excess moisture from the grated potatoes to prevent a soggy dish.
  • This dish can be prepared ahead of time and baked just before serving.
  • For a richer flavor, try using a mix of sour cream and heavy cream.
