- 2 cups carrots, chopped
- 1 cup celery, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp thyme
- 1/4 tsp basil
- 1 tbsp olive oil
- 1 cup spinach leaves
Instructions
- Heat olive oil in a large pot over medium heat.
- Add carrots, celery, onion, and garlic; sauté for 5 minutes.
- Add the vegetable broth, diced tomatoes, salt, pepper, thyme, and basil. Bring to a boil.
- Reduce the heat and let it simmer for 20 minutes, or until the vegetables are tender.
- Add the spinach and cook for another 5 minutes.
- Serve hot and enjoy your healthy vegetable soup!
Notes
- For a vegan version, ensure the broth is vegetable-based and not chicken-based.
- For extra flavor, add a squeeze of lemon juice just before serving.
