Description

Ingredients

  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1/4 tsp basil
  • 1 tbsp olive oil
  • 1 cup spinach leaves

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add carrots, celery, onion, and garlic; sauté for 5 minutes.
  3. Add the vegetable broth, diced tomatoes, salt, pepper, thyme, and basil. Bring to a boil.
  4. Reduce the heat and let it simmer for 20 minutes, or until the vegetables are tender.
  5. Add the spinach and cook for another 5 minutes.
