- 3 lbs beef chuck roast
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup barbecue sauce
- 1 tbsp smoked paprika
- 1 tsp chili powder
- 1 tsp ground cumin
- Salt and pepper to taste
- 4 sandwich buns, toasted
- Coleslaw for topping (optional)
Instructions
- Season beef roast with salt, pepper, smoked paprika, chili powder, and cumin.
- Place onion slices and garlic in the bottom of a slow cooker or Dutch oven.
- Put the beef on top, pour beef broth and half the barbecue sauce over it.
- Cook on low for 8 hours or until beef is tender and shreds easily.
- Remove beef and shred with two forks.
- Mix shredded beef with remaining barbecue sauce.
- Serve piled on toasted buns and top with coleslaw if desired.

- For extra flavor, sear the beef on all sides before slow cooking.
- Use your favorite barbecue sauce—sweet, spicy, or smoky.
- Coleslaw adds crunch and a refreshing contrast but is optional.
