- ⅔ cup brown sugar
- ⅔ cup granulated sugar
- 1 cup applesauce or canola oil
- 3 large eggs, at room temperature
- 1 tablespoon vanilla extract
Add-ins:
- 1½ cups semi-sweet chocolate chips
- ½ cup mini semi-sweet chocolate chips (optional, reserve a few tablespoons for topping)
Instructions
- Prepare the Oven and Pans:
Preheat oven to 350°F (175°C). Grease two 8×4-inch loaf pans and line them with parchment paper for easier removal. Set aside. - Mix Dry Ingredients:
In a large bowl, whisk together the flour, salt, baking powder, baking soda, and pumpkin pie spice until well combined. - Mix Wet Ingredients:
In a separate medium bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, applesauce or oil, eggs, and vanilla extract until smooth. - Combine Wet and Dry Ingredients:
Pour the wet mixture into the dry ingredients and stir until just combined, being careful not to overmix. - Fold in Chocolate Chips:
Gently fold in the chocolate chips, reserving a few mini chocolate chips to sprinkle on top if desired. - Bake:
Divide the batter evenly between the prepared loaf pans. Sprinkle reserved mini chocolate chips on top if desired. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean. - Cool and Serve:
Let the loaves cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
