Description

A festive and moist poke cake made with spice cake, pumpkin puree, and filled with creamy vanilla pudding, topped with whipped cream and garnished for a seasonal touch.

Ingredients

Scale

For the Cake:

  • 1 box spice cake mix (plus ingredients required on the box) or homemade spice cake
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice

For the Filling:

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups cold milk
  • ½ teaspoon cinnamon

For the Topping:

  • 1 container (8 oz) whipped topping (like Cool Whip)
  • ½ cup caramel sauce (optional)
  • Pumpkin-shaped candies (for garnish)
  • Crushed graham crackers or cookie crumbs (for garnish)

Instructions

  • Preheat the Oven: Follow the temperature instructions on the spice cake mix box.
  • Mix the Cake Batter: Prepare the spice cake mix as directed on the box, stirring in the pumpkin puree and pumpkin pie spice before baking.
  • Bake: Pour the batter into a 9×13-inch pan and bake according to package instructions.
  • Cool and Poke: Once the cake is baked and slightly cooled, use the handle of a wooden spoon to poke holes evenly across the surface.
  • Make the Pudding: In a bowl, whisk together the instant vanilla pudding mix, cold milk, and cinnamon until thickened.
  • Fill the Cake: Pour the pudding mixture over the cake, ensuring it fills the holes. Spread evenly over the top.
  • Chill: Refrigerate the cake for at least 2 hours to set.
  • Spread the Whipped Topping: Once chilled, spread the whipped topping over the cake.
  • Garnish: Drizzle with caramel sauce (if desired) and garnish with pumpkin-shaped candies and crushed graham crackers or cookie crumbs for a fun and festive touch.
  • Serve: Slice and enjoy chilled.

Notes

  • For a richer flavor, substitute half of the milk in the pudding with cream.
  • This cake is best served chilled and does not require reheating.
