Description

These Pumpkin Spice Rice Krispie Treats are a delightful twist on the classic treat, infused with warm pumpkin spice flavors perfect for fall gatherings or a quick and easy snack.


Ingredients

  • 6 cups Rice Krispies cereal
  • 1/4 cup unsalted butter
  • 1 (10 oz) bag mini marshmallows
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/4 cup canned pumpkin purée (not pumpkin pie filling)
  • Optional: White chocolate drizzle or candy corn for decoration

Instructions

  • Prepare the Pan: Grease a 9×13-inch baking dish with butter or non-stick spray and set it aside.
  • Melt the Butter and Marshmallows: In a large pot, melt the butter over medium-low heat. Add the mini marshmallows and stir until completely melted and smooth.
  • Add Pumpkin and Spices: Stir in the pumpkin purée, vanilla extract, pumpkin pie spice, and cinnamon (if using) until fully combined. Stir for another minute to evaporate some moisture from the pumpkin purée.
  • Mix in the Cereal: Remove the pot from heat and fold in the Rice Krispies cereal until evenly coated with the marshmallow mixture.
  • Press into the Pan: Using a buttered spatula or greased hands, press the mixture into the prepared baking dish. Be gentle to avoid compressing the treats too much.
  • Cool and Cut: Allow the treats to cool for about 30 minutes before cutting into squares.
  • Optional Decorations: Drizzle melted white chocolate over the top or sprinkle with candy corn for decoration.
