Description

Instructions

  • Prepare the Pan: Grease a 9×13-inch baking dish with butter or non-stick spray and set it aside.
  • Melt the Butter and Marshmallows: In a large pot, melt the butter over medium-low heat. Once melted, add the mini marshmallows and stir constantly until the marshmallows are completely melted and smooth.
  • Add Pumpkin and Spices: Stir in the pumpkin purée, vanilla extract, pumpkin pie spice, and cinnamon (if using) until fully combined. Continue stirring for another minute to let some moisture evaporate from the pumpkin purée.
  • Mix in the Cereal: Remove the pot from heat and quickly fold in the Rice Krispies cereal until the cereal is evenly coated with the marshmallow mixture.
  • Press into the Pan: Using a buttered spatula or your hands (greased with butter or sprayed with non-stick spray), press the mixture evenly into the prepared baking dish. Be gentle to avoid compressing the treats too much, as this can make them hard.
  • Cool and Cut: Allow the Pumpkin Spice Rice Krispie Treats to cool for about 30 minutes before cutting into squares.
  • Optional Decorations: For a festive touch, drizzle melted white chocolate over the top or sprinkle with candy corn.
