  • 1/2 cup pumpkin puree
  • 1 (14 oz) can sweetened condensed milk
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup graham cracker crumbs
  • 1/2 cup white chocolate chips or melting wafers
  • Orange food coloring (optional)
  • Granulated sugar (as needed, for coating)
  • Chocolate chips (for topping, as stems)

Instructions

  • Prepare the Pumpkin Mixture:
    • In a medium saucepan, combine the butter, softened cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice.
    • Stir the mixture over medium heat until well combined and thickened (about 5-7 minutes).
  • Add White Chocolate and Graham Cracker Crumbs:
    • Stir in the white chocolate chips and graham cracker crumbs until the chocolate has melted and the mixture is smooth.
    • Add orange food coloring as desired, then continue stirring until the mixture thickens and pulls away from the sides of the pan.
  • Chill the Mixture:
    • Transfer the mixture to a greased baking sheet and spread it evenly.
    • Let it chill in the refrigerator until firm, at least 2 hours or overnight.
  • Shape the Truffles:
    • Once firm, coat your hands with butter to prevent sticking and roll the mixture into small balls.
  • Coat and Decorate:
    • Roll the truffle balls in granulated sugar to coat.
    • Use a toothpick to press ridges into each truffle to resemble a pumpkin.
    • Place a chocolate chip on top of each truffle to create the “pumpkin stem.”
  • Chill and Serve:
    • Chill the truffles in the refrigerator until ready to serve.
