- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon

- 1/2 cup packed brown sugar
- 2 large eggs
- 1 cup canned pumpkin puree
- 1/2 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners or grease the cups.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
- In a large mixing bowl, combine the granulated sugar, brown sugar, eggs, pumpkin puree, melted butter, vanilla extract, and sour cream. Mix until smooth and well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- Fold in the white chocolate chips until evenly distributed throughout the batter.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a spicier muffin, add more cinnamon or a pinch of cloves.
- Store leftover muffins in an airtight container for up to 3 days or freeze for up to 3 months.
- Feel free to substitute the white chocolate chips with dark or milk chocolate if preferred.
