Instructions

  1. Prepare the ube filling: In a large bowl, whisk together the ube halaya (ube jam), mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat the mixture until smooth and creamy. Add milk a little at a time to adjust the consistency, making it easier to spread.
  2. Prepare the coffee mixture: In a shallow dish, combine the cooled brewed coffee and coffee liqueur (if using). Stir to combine.
  3. Assemble the tiramisu: Quickly dip each ladyfinger into the coffee mixture (don’t soak them—just a quick dip). Arrange a layer of dipped ladyfingers at the bottom of a 9×9-inch dish or a similar-sized serving dish.
  4. Layer the ube filling: Spread half of the ube mixture over the ladyfingers, smoothing it into an even layer. Repeat the process with another layer of dipped ladyfingers and the remaining ube filling.
