- 1 cup all-purpose flour
- 1/2 cup sugar
- 2 large eggs
- 1 cup milk
- 1/2 cup fresh cheese or ricotta
- 1 tbsp butter, melted
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- Butter or oil, for greasing molds
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or individual custard molds.
- In a bowl, whisk together eggs and sugar until well combined and slightly frothy.
- Gradually add milk, fresh cheese, melted butter, vanilla extract, and lemon zest. Mix until smooth.
- Slowly stir in the flour until batter is smooth and free of lumps.
- Pour the batter evenly into the prepared molds, filling about 3/4 full.
- Bake for 25-30 minutes or until the tops are lightly golden and a toothpick inserted comes out clean.
- Allow to cool before removing from molds.
Notes
- Fresh cheese can be substituted with ricotta or cream cheese.
- Lemon zest adds a nice citrus aroma, but can be omitted if preferred.
- Serve warm or at room temperature with a sprinkle of powdered sugar.
