Description

Traditional Portuguese custard cupcakes with a delicate, creamy filling and a slightly crisp pastry shell, perfect for a sweet treat.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup fresh cheese or ricotta
  • 1 tbsp butter, melted
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • Butter or oil, for greasing molds

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or individual custard molds.
  2. In a bowl, whisk together eggs and sugar until well combined and slightly frothy.
  3. Gradually add milk, fresh cheese, melted butter, vanilla extract, and lemon zest. Mix until smooth.
  4. Slowly stir in the flour until batter is smooth and free of lumps.
  5. Pour the batter evenly into the prepared molds, filling about 3/4 full.
  6. Bake for 25-30 minutes or until the tops are lightly golden and a toothpick inserted comes out clean.
  7. Allow to cool before removing from molds.

Notes

  • Fresh cheese can be substituted with ricotta or cream cheese.
  • Lemon zest adds a nice citrus aroma, but can be omitted if preferred.
  • Serve warm or at room temperature with a sprinkle of powdered sugar.
