Description

These Quesadilla Cones are a fun twist on traditional quesadillas, featuring crispy tortilla cones filled with savory chicken, peppers, and melted cheese. Perfect for parties or family dinners, theyโ€™re easy to make and even more enjoyable to eat!

  • 1 tbsp olive oil
  • 1 red onion, diced
  • 2 bell peppers (any color), diced
  • 2 cups shredded cooked chicken
  • 1 tbsp fajita seasoning
  • 1/2 cup salsa
  • 4 large flour tortilla wraps
  • 1 1/2 cups shredded cheddar cheese
  • Oil spray

Toppings:

  • Sour cream
  • Fresh coriander (cilantro), chopped

Instructions

  • Preheat Oven: Preheat your oven to 180ยฐC (350ยฐF) if you are baking the quesadilla cones.
  • Cook Vegetables: In a large pan, heat the olive oil over medium heat. Add the diced onion and peppers. Fry until softened and charred, about 5-7 minutes.
  • Mix Filling: In a large mixing bowl, combine the shredded chicken with fajita seasoning and salsa. Add the cooked peppers and onion, and stir well to combine.
  • Prepare Cones: Cut each tortilla in half, then fold the halves into cone shapes and secure with toothpicks.
  • Fill Cones: Start by adding a layer of shredded cheese at the bottom of each cone. Spoon the chicken and vegetable filling into the cones, topping with more shredded cheese.
  • Cook:
    • Air Fryer Method: Line the air fryer basket with baking paper. Space the cones out in the basket and lightly spray with oil. Cook at 180ยฐC (350ยฐF) for 8 minutes.
    • Oven Method: Line a baking tray with baking paper. Space the cones on the tray and spray with oil. Bake in the preheated oven for 12 minutes.
  • Serve: Remove the toothpicks from the cones and serve immediately with napkins, sour cream, and fresh coriander.
