Description

These Quesadilla Cones are a fun twist on traditional quesadillas, featuring crispy tortilla cones filled with savory chicken, peppers, and melted cheese. Perfect for parties or family dinners, they’re easy to make and even more enjoyable to eat!


Ingredients

  • 1 tbsp olive oil
  • 1 red onion, diced
  • 2 bell peppers (any color), diced
  • 2 cups shredded cooked chicken
  • 1 tbsp fajita seasoning
  • 1/2 cup salsa
  • 4 large flour tortilla wraps
  • 1 1/2 cups shredded cheddar cheese
  • Oil spray

Toppings:

  • Sour cream
  • Fresh coriander (cilantro), chopped

Instructions

  • Preheat Oven: Preheat your oven to 180°C (350°F) if you are baking the quesadilla cones.
  • Cook Vegetables: In a large pan, heat the olive oil over medium heat. Add the diced onion and peppers. Fry until softened and charred, about 5-7 minutes.
  • Mix Filling: In a large mixing bowl, combine the shredded chicken with fajita seasoning and salsa. Add the cooked peppers and onion, and stir well to combine.
  • Prepare Cones: Cut each tortilla in half, then fold the halves into cone shapes and secure with toothpicks.
  • Fill Cones: Start by adding a layer of shredded cheese at the bottom of each cone. Spoon the chicken and vegetable filling into the cones, topping with more shredded cheese.
  • Cook:
    • Air Fryer Method: Line the air fryer basket with baking paper. Space the cones out in the basket and lightly spray with oil. Cook at 180°C (350°F) for 8 minutes.
    • Oven Method: Line a baking tray with baking paper. Space the cones on the tray and spray with oil. Bake in the preheated oven for 12 minutes.
  • Serve: Remove the toothpicks from the cones and serve immediately with napkins, sour cream, and fresh coriander.
