Description

  • 1 cup shredded cheddar cheese
  • 1/2 cup Mexican cheese blend (such as Oaxaca, Asadero, or Monterey Jack)
  • 1 tablespoon fresh cilantro, chopped (optional, for garnish)
  • 12 tablespoons pickled jalapeños or fresh jalapeños (optional, for extra spice)
  • Tortilla chips or flour tortillas (for serving)

Instructions

  1. Heat a large skillet (preferably cast iron) over medium heat. Add the chorizo and cook, breaking it up with a spoon, until fully cooked and browned, about 5-7 minutes. Remove any excess grease.
  2. Add the chopped onion to the skillet and cook for another 2-3 minutes, until softened.
  3. Add the minced garlic and cook for an additional 30 seconds, stirring frequently to prevent burning.
  4. Lower the heat to medium-low and sprinkle the shredded mozzarella, cheddar, and Mexican cheese blend evenly over the chorizo mixture.
  5. Cover the skillet with a lid and let the cheese melt for about 3-4 minutes, or until gooey and bubbly.
  6. Once the cheese has melted, remove from heat and garnish with fresh cilantro and pickled jalapeños, if desired.
  7. Serve immediately with tortilla chips or warm flour tortillas for dipping.

Notes

  • If you prefer a spicier queso, you can add more jalapeños or even some diced fresh chilies to the chorizo mixture.
  • For a vegetarian version, you can swap out the chorizo for sautéed mushrooms or bell peppers.
