- 4 cups fresh or frozen corn kernels
- 1 cup cherry tomatoes, halved
- 1 cup diced zucchini
- 1/2 cup diced red bell pepper
- 1/4 cup chopped fresh basil or cilantro
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- If using fresh corn, cook the corn kernels in boiling water for 3-4 minutes, then drain. If frozen, thaw and drain excess water.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Add zucchini and red bell pepper; cook for 3-4 minutes until slightly tender.
- Add corn kernels and cherry tomatoes; cook for another 2-3 minutes, stirring gently.
- Remove from heat and stir in lemon juice and chopped herbs.
- Season with salt and pepper to taste. Serve warm or at room temperature.
