A vibrant and fresh summer side dish featuring sweet corn combined with colorful vegetables, lightly seasoned for a quick and healthy medley.


Ingredients

  • 4 cups fresh or frozen corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 cup diced zucchini
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh basil or cilantro
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. If using fresh corn, cook the corn kernels in boiling water for 3-4 minutes, then drain. If frozen, thaw and drain excess water.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Add zucchini and red bell pepper; cook for 3-4 minutes until slightly tender.
  5. Add corn kernels and cherry tomatoes; cook for another 2-3 minutes, stirring gently.
  6. Remove from heat and stir in lemon juice and chopped herbs.
  7. Season with salt and pepper to taste. Serve warm or at room temperature.
