- 8 oz lo mein noodles
- ¼ cup honey
- ¼ cup soy sauce
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 cups mixed vegetables (e.g., bell peppers, broccoli, and carrots)
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Green onions (optional, for garnish)
Instructions
- Cook the lo mein noodles according to the package instructions. Drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium-high heat. Add the garlic and ginger, sautéing for about 30 seconds.
- Add the mixed vegetables and cook until tender, about 3-4 minutes. Stir in the cooked chicken, honey, and soy sauce. Mix well.
- Add the lo mein noodles to the pan and toss everything together until heated through. Season with salt and pepper to taste.
- Serve warm, garnished with green onions if desired.
Notes
- Feel free to swap the mixed vegetables with your favorites, such as snow peas, mushrooms, or bok choy.
- For a spicier version, add red pepper flakes or chili paste.
