Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Prepare Puff Pastry: Roll out the puff pastry on a lightly floured surface. Cut it into 12 equal squares (about 2×2 inches each).
- Make Filling: In a small bowl, mix softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Assemble Bites: Place a small dollop of cream cheese mixture in the center of each puff pastry square. Top with one or two raspberries (or a small spoonful of raspberry preserves).
- Seal Edges: Fold the pastry corners over the filling, pressing gently to seal the edges.
- Bake: Transfer the assembled bites to the prepared baking sheet and bake for 15-18 minutes, or until the puff pastry is golden and crisp.
- Cool & Dust: Allow bites to cool slightly, then dust with powdered sugar.
