  • 1 cup heavy cream, chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For Garnish:

  • Fresh raspberries
  • Crumbled graham crackers or cookies
  • Fresh mint leaves

Instructions

  • Prepare the Raspberry Puree:
    • In a small saucepan, combine the raspberries, sugar, and lemon juice.
    • Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens slightly (about 5-7 minutes).
    • Remove from heat and strain the mixture through a fine-mesh sieve to remove seeds.
    • Let the puree cool completely before using.
  • Make the Raspberry Mousse:
    • In a large bowl, whip the chilled heavy cream with powdered sugar and vanilla extract until soft peaks form.
    • Gently fold in Β½ cup of the prepared raspberry puree to create a light and fluffy raspberry mousse.
    • Refrigerate the mousse while preparing the other layers.
  • Make the Whipped Cream:
    • In a separate bowl, whip the remaining heavy cream, powdered sugar, and vanilla extract until soft peaks form.
