- Crumbled graham crackers or cookies
- Fresh mint leaves
Instructions
- Prepare the Raspberry Puree:
- In a small saucepan, combine the raspberries, sugar, and lemon juice.
- Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens slightly (about 5-7 minutes).
- Remove from heat and strain the mixture through a fine-mesh sieve to remove seeds.
- Let the puree cool completely before using.
- Make the Raspberry Mousse:
- In a large bowl, whip the chilled heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Gently fold in Β½ cup of the prepared raspberry puree to create a light and fluffy raspberry mousse.
- Refrigerate the mousse while preparing the other layers.
- Make the Whipped Cream:
- In a separate bowl, whip the remaining heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Set aside for layering in the parfaits.
