For the Raspberry Layer:

  • 2 cups fresh raspberries (or frozen, thawed)

For the Mascarpone Cream:

  • 1/2 cup powdered sugar

  • 2430 ladyfingers (savoiardi)
  • 1 cup brewed coffee (cooled)
  • 2 tbsp coffee liqueur (optional)

Instructions

  1. Prepare the Raspberry Layer: In a small saucepan, combine the raspberries, sugar, and lemon juice. Heat over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens slightly (about 5-7 minutes). Once it reaches a syrupy consistency, remove from heat and set aside to cool.
  2. Make the Mascarpone Cream: In a large mixing bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract together until smooth and creamy. The mixture should be thick and hold soft peaks.
  3. Prepare the Coffee Mixture: In a shallow bowl, combine the cooled brewed coffee with the coffee liqueur (if using). This will be used to soak the ladyfingers.
  4. Assemble the Tiramisu:
    • Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them too long (they should be lightly moistened, not soggy).
    • Arrange a layer of dipped ladyfingers at the bottom of a 9×9-inch baking dish or similar-sized trifle dish.
    • Spread half of the mascarpone cream over the layer of ladyfingers.
    • Spoon half of the raspberry mixture over the mascarpone cream layer.
    • Repeat the process with another layer of dipped ladyfingers, the remaining mascarpone cream, and the rest of the raspberry mixture.
  5. Chill the Tiramisu: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, preferably overnight. This will allow the flavors to meld together and the dessert to set.
  6. Serve: Before serving, dust the top with cocoa powder and garnish with additional fresh raspberries for an extra touch of elegance.

Notes

  • For a non-alcoholic version, simply skip the coffee liqueur.
  • You can substitute the raspberries with other berries such as strawberries or blueberries for a different flavor profile.
