Description

A vibrant and flavorful dish featuring tender ravioli, sautéed asparagus, juicy cherry tomatoes, and aromatic garlic and herbs. This easy-to-make recipe is perfect for a quick, light dinner that is both satisfying and refreshing.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound asparagus, ends trimmed, cut into 2-inch pieces
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 package (20 ounces) refrigerated cheese ravioli

Instructions

  • Cook the Ravioli:
Cook the ravioli according to the package instructions. Drain and set aside.
  • Prepare the Vegetables:
In a large skillet, heat the olive oil over medium-high heat. Add the asparagus and cook for 4-5 minutes, stirring occasionally until tender-crisp.
  • Add the Tomatoes and Garlic:
Add the halved cherry tomatoes and minced garlic to the skillet. Season with salt and pepper to taste. Cook for another 2-3 minutes, allowing the tomatoes to soften and release their juices.
  • Simmer the Sauce:
Pour in the chicken broth and lemon juice. Bring the mixture to a simmer, then cook for another 2 minutes to allow the flavors to meld together.
  • Combine with Ravioli:
Add the cooked ravioli to the skillet. Gently toss the ravioli with the vegetables and sauce, ensuring everything is well coated.
  • Finish with Herbs and Cheese:
Stir in the chopped basil, parsley, and grated Parmesan cheese. Cook for another 1-2 minutes until everything is heated through and the cheese has melted into the sauce.
  • Serve:
Serve the ravioli hot, topped with additional Parmesan cheese, if desired.

Notes

  • If you prefer a creamier texture, feel free to add a splash of heavy cream to the sauce when simmering the broth.
  • For a gluten-free version, you can use gluten-free ravioli instead of regular ravioli.
  • For added protein, grilled chicken or shrimp can be added to the dish.
