- 1/4 cup milk
- 1 red bell pepper, diced
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled goat cheese
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano (optional)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a large bowl, whisk together eggs, milk, salt, pepper, and oregano.
- Heat olive oil in an oven-safe skillet over medium heat. Add onions and red bell pepper; sautรฉ until softened, about 5 minutes.
- Add chopped spinach to the skillet and cook until wilted, about 2 minutes.
- Pour the egg mixture over the vegetables in the skillet. Sprinkle goat cheese evenly on top.
- Cook on the stovetop without stirring for 3-4 minutes until edges start to set.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, until the frittata is fully set and lightly golden.
- Remove from oven, let cool slightly, slice, and serve.
Notes
- Use a non-stick or well-seasoned cast iron skillet for best results.
- Feel free to substitute goat cheese with feta or ricotta.
