  • 2 tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk, room temperature
  • 1/2 cup vegetable oil
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 2 tbsp red food coloring

For the Cheesecake Layer:

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

For the Strawberry Topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

For Garnish:

  • Fresh strawberries
  • Whipped cream

Instructions

Step 1: Make the Red Velvet Cake Layer

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan or round cake pan.
  2. In a medium bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate large bowl, whisk the buttermilk, oil, egg, vanilla extract, vinegar, and red food coloring until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool completely before moving on to the cheesecake layer.

Step 2: Make the Cheesecake Layer

  1. In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until fully combined and light.
  4. Spread the cheesecake layer evenly over the cooled red velvet cake.

Step 3: Prepare the Strawberry Topping

  1. In a bowl, combine sliced strawberries, sugar, and lemon juice. Stir to coat the strawberries and allow them to sit for 10-15 minutes to release their juices.
  2. Spoon the strawberries and their syrup over the cheesecake layer, spreading evenly.

Step 4: Garnish and Serve

  1. Refrigerate the dessert for at least 2 hours to set.
  2. Before serving, garnish with fresh strawberries and a dollop of whipped cream.
