Description
These mini cookie bites are loaded with gooey chocolate chips and stuffed with Reese’s peanut butter cups for the ultimate sweet treat. Perfect for parties or a quick dessert fix!

- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
- 24 mini Reese’s peanut butter cups, unwrapped
Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until combined. Fold in the chocolate chips.
- Roll the dough into 1-inch balls and place them in the prepared mini muffin tin.
- Bake for 10-12 minutes or until the edges are golden brown. Remove from the oven and immediately press a mini Reese’s peanut butter cup into the center of each cookie bite.
- Let the cookie bites cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a different flavor, try using milk chocolate or dark chocolate chips.
