For the Puff Pastry:

  • 1 cup water
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs

For the Peanut Butter Cream Filling:

  • ½ cup powdered sugar
  • ½ cup peanut butter (smooth or chunky)
  • ½ teaspoon vanilla extract

For the Chocolate Glaze:

  • ½ cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Make the Puff Pastry:
    • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
    • In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
    • Once the butter is melted, add the flour all at once. Stir vigorously until the mixture forms a dough and pulls away from the sides of the pan. Cook for 1-2 more minutes.
    • Remove the dough from the heat and let it cool slightly for 5 minutes.
    • Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. The dough should be smooth and slightly glossy.
    • Using a spoon or piping bag, scoop or pipe dough onto the prepared baking sheet into 1½-inch rounds, spaced about 2 inches apart.
    • Bake for 20-25 minutes, or until the puffs are golden brown and puffed up. Allow the cream puffs to cool completely on a wire rack.
  2. Prepare the Peanut Butter Cream Filling:
    • In a chilled mixing bowl, beat the heavy cream and powdered sugar until soft peaks form.
    • Add the peanut butter and vanilla extract and continue beating until the cream is firm and the mixture is smooth. Set aside in the refrigerator.
  3. Make the Chocolate Glaze:
    • In a microwave-safe bowl, heat the chocolate chips and heavy cream in 20-second intervals, stirring after each, until the chocolate is fully melted and smooth. Set aside to cool slightly.
  4. Assemble the Cream Puffs:
    • Once the puff pastry has cooled, cut each puff in half horizontally.
    • Spoon or pipe the peanut butter cream filling into the bottom half of each puff.
    • Place the top half of the puff on top of the cream.
    • Drizzle the chocolate glaze over the top of each cream puff.
  5. Serve:
    • Serve immediately or refrigerate until ready to serve. These are best enjoyed fresh, but they can be stored in an airtight container for up to 2 days.

Notes

  • For an extra touch, sprinkle chopped peanuts on top of the chocolate glaze for added texture and flavor.
  • If you’re short on time, you can use store-bought puff pastry shells, but homemade puff pastry will give you the best results.
  • If you prefer a lighter filling, you can substitute the peanut butter with almond butter or cashew butter.
