Ingredients

  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs
  • 1/3 cup water
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1/2 cup heavy cream
  • 1/2 cup mini chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C) and grease a jelly roll pan.
  • In a bowl, mix together the flour, sugar, cocoa powder, baking powder, and salt.
  • In another bowl, whisk the eggs, water, vegetable oil, and vanilla extract together. Add this mixture to the dry ingredients and mix until smooth.
  • Spread the batter evenly in the greased jelly roll pan and bake for 15 minutes, or until a toothpick inserted comes out clean.
  • Once baked, remove the cake from the oven and roll it in a clean towel to cool.
  • For the filling, beat together the peanut butter and powdered sugar until smooth. Gently fold in the heavy cream until fully combined.
  • Once the cake has cooled, carefully unroll it. Spread the peanut butter filling evenly over the surface and sprinkle the mini chocolate chips on top.
  • Roll the cake back up, refrigerate for at least 1 hour before slicing and serving.
