- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 3 large eggs
- 1/3 cup water
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1/2 cup heavy cream
- 1/2 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a jelly roll pan.
- In a bowl, mix together the flour, sugar, cocoa powder, baking powder, and salt.
- In another bowl, whisk the eggs, water, vegetable oil, and vanilla extract together. Add this mixture to the dry ingredients and mix until smooth.
- Spread the batter evenly in the greased jelly roll pan and bake for 15 minutes, or until a toothpick inserted comes out clean.
- Once baked, remove the cake from the oven and roll it in a clean towel to cool.
- For the filling, beat together the peanut butter and powdered sugar until smooth. Gently fold in the heavy cream until fully combined.
- Once the cake has cooled, carefully unroll it. Spread the peanut butter filling evenly over the surface and sprinkle the mini chocolate chips on top.
- Roll the cake back up, refrigerate for at least 1 hour before slicing and serving.
Notes
- Be sure to allow the cake to cool completely before unrolling to prevent it from cracking.
- Refrigerating the cake after rolling helps the filling set and makes it easier to slice.
- If you prefer a richer filling, feel free to add a few extra tablespoons of powdered sugar.
