Instructions

  1. Prepare the Cucumber: Peel and chop the cucumber into chunks. If you prefer a smoother texture, you can remove the seeds as well.

  2. Blend the Cucumber: In a blender, combine the chopped cucumber with 1 cup of cold water. Blend until smooth and well combined. If you prefer a more textured drink, you can pulse it to leave small cucumber bits.

  3. Strain the Cucumber Mixture (Optional): To make the lemonade smooth, strain the cucumber mixture through a fine mesh sieve or cheesecloth to remove any pulp. This step is optional, depending on how smooth you prefer your drink.

  4. Combine Lemon and Sweetener: In a large pitcher, mix the fresh lemon juice with honey (or your preferred sweetener) until fully dissolved. Adjust the sweetness according to your taste.

  5. Mix the Lemonade: Add the strained cucumber juice to the pitcher with lemon juice and sweetener. Stir to combine. Add the remaining 3 cups of cold water and stir well. Taste the lemonade and adjust sweetness or water to your liking.

  6. Chill and Serve: Place the lemonade in the fridge to chill for at least 1 hour before serving. Serve over ice, and garnish with fresh mint leaves, lemon slices, and cucumber slices for a decorative touch.
