Ingredients

Scale
  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon peppermint extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cocoa powder
  • 1 cup chocolate chunks
  • 1 cup mint chocolate chunks
  • Fresh mint leaves for garnish

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the butter, sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla and peppermint extracts.
  • In a separate bowl, whisk together the flour, baking soda, salt, and cocoa powder.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chocolate chunks and mint chocolate chunks.
  • Drop dough by rounded tablespoons onto the prepared baking sheet.
  • Bake for 10-12 minutes, or until the edges are set and the centers are still soft.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Garnish with fresh mint leaves and additional chocolate chunks if desired.

Notes

  • Ensure the butter is softened at room temperature for easier mixing.
  • For a stronger mint flavor, consider adding a bit more peppermint extract.
