This Reuben Bake with Layers of Corned Beef, Sauerkraut, and Swiss Cheese is a hearty and delicious twist on the classic Reuben sandwich. Layers of tender corned beef, tangy sauerkraut, and melted Swiss cheese are baked together with a crispy, golden topping, making this a perfect comfort food dish for any time of year.

Ingredients

Scale
  • 1 lb corned beef (cooked and sliced, or use deli-style corned beef)
  • 2 cups sauerkraut, drained
  • 2 cups Swiss cheese, shredded
  • 1/2 cup thousand island dressing (or Russian dressing)
  • 1 loaf of rye bread (cut into cubes)
  • 1/2 cup butter, melted
  • 1 tsp caraway seeds (optional, for extra flavor)
  • 1/2 cup grated Parmesan cheese (for topping, optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Prepare the Bread Layer:
    • Cube the rye bread into bite-sized pieces and place them in a large bowl. Pour the melted butter over the bread cubes, tossing them to coat evenly.
    • Spread the buttered bread cubes evenly in the bottom of the prepared baking dish.
  3. Layer the Ingredients:
    • On top of the bread cubes, layer the sliced corned beef evenly.
    • Spread the drained sauerkraut over the corned beef layer.
    • Sprinkle the shredded Swiss cheese on top of the sauerkraut.
    • Drizzle the thousand island dressing over the cheese layer, spreading it evenly.
    • If you like, sprinkle a teaspoon of caraway seeds for an added Reuben flavor.
  4. Add Topping:
    • Top with the grated Parmesan cheese, if desired, for extra flavor and a crispy golden finish.
  5. Bake:
    • Cover the dish with aluminum foil and bake for 25-30 minutes, or until heated through.
    • Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and crispy.
  6. Serve:
    • Let the bake sit for 5-10 minutes before serving to allow it to set.
    • Serve hot, and enjoy this comforting and flavorful Reuben-inspired dish!

Notes

  • You can make this dish ahead of time by assembling it the night before and baking it the next day. Just cover it tightly with foil and refrigerate it.
  • For a gluten-free option, substitute gluten-free bread and use a gluten-free thousand island dressing.
  • You can use deli-style corned beef or leftover corned beef from a cooked brisket for a more authentic flavor.
