Flaky crescent roll dough is filled with layers of corned beef, Swiss cheese, and tangy sauerkraut, then baked to golden perfection. - 2 cans (8 oz each) crescent roll dough
- 1 lb corned beef, thinly sliced
- 1 1/2 cups shredded Swiss cheese
- 1 cup sauerkraut, drained
- 1/4 cup thousand island dressing (optional, for drizzling)
- 1 tablespoon butter (for greasing the pan)
Instructions
- Preheat the Oven:
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or non-stick spray. - Prepare the Crescent Dough:
Unroll the crescent roll dough and press the seams together to form a solid sheet of dough. Place half of the dough into the bottom of the prepared baking dish, pressing it down to cover the entire bottom of the pan. - Assemble the Bake:
Layer the corned beef slices evenly over the dough, followed by a layer of sauerkraut. Sprinkle the shredded Swiss cheese over the sauerkraut. - Top with Remaining Dough:
Place the second sheet of crescent dough over the top of the cheese, stretching it to cover the filling completely. Pinch the seams to seal the edges. - Bake:
Bake in the preheated oven for 20-25 minutes, or until the crescent dough is golden brown and cooked through. - Serve:
Remove from the oven and let it cool for a few minutes before slicing. Drizzle with Thousand Island dressing if desired for an extra Reuben touch.
Notes
- If you want a little extra crunch, you can lightly brush the top of the crescent dough with melted butter before baking.
- You can substitute the Swiss cheese for another cheese like mozzarella if preferred, but Swiss is traditional for a Reuben.
- For a lighter version, you can use a reduced-fat version of the crescent rolls or omit the cheese and use a little more sauerkraut.
