Description

Reuben Dip is a creamy and savory dip that combines all the flavors of the classic Reuben sandwich in a warm, cheesy, and irresistible form. Perfect for parties, game days, or gatherings, this dip features corned beef, sauerkraut, Swiss cheese, and a tangy dressing. Serve it with crackers, bread, or veggies for a crowd-pleasing appetizer!

Ingredients

Scale
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 ml) sour cream
  • 1 cup (240 g) mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp ketchup
  • 1 ½ cups (150 g) shredded Swiss cheese
  • 1 ½ cups (150 g) shredded mozzarella cheese
  • 1 cup (150 g) corned beef, chopped
  • 1 cup (150 g) sauerkraut, drained and squeezed dry
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and grease a baking dish (such as an 8×8-inch dish or a similar size).
  2. Mix the Dip:
    • In a large bowl, combine the cream cheese, sour cream, mayonnaise, Dijon mustard, ketchup, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until smooth.
    • Stir in the shredded Swiss cheese, shredded mozzarella cheese, chopped corned beef, and sauerkraut until evenly combined.
  3. Bake:
    • Spread the dip mixture evenly into the prepared baking dish.
    • Bake for 20-25 minutes, or until the dip is hot and bubbly, and the cheese is melted and slightly golden on top.
  4. Serve:
    • Serve the dip warm with crackers, chips, bread, or vegetables for dipping. Enjoy!

Notes

  • If you prefer a lighter version, you can substitute Greek yogurt for the sour cream or use reduced-fat mayonnaise.
  • You can top the dip with extra shredded cheese before baking for a cheesier, gooey topping.
  • To make the dip ahead of time, prepare it in the dish, cover it with plastic wrap, and refrigerate until ready to bake.
