Rhubarb Cheesecake Dream Bars are a layered dessert featuring a buttery crust, creamy cheesecake filling, and a sweet-tart rhubarb topping. These dreamy bars are the perfect balance of rich, creamy, and fruity flavors.

- 1 cup all-purpose flour
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup powdered sugar
- 1 package (8 oz) cream cheese, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen rhubarb, chopped
- 1/4 cup granulated sugar (for rhubarb topping)
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- In a mixing bowl, combine flour, powdered sugar, and cold butter. Cut in the butter until the mixture resembles coarse crumbs. Press into the bottom of the prepared pan to form the crust.
- Bake the crust for 12-15 minutes, or until lightly golden. Remove and set aside.
- In another bowl, beat cream cheese, 1/2 cup sugar, egg, and vanilla extract until smooth and creamy. Spread the cheesecake mixture evenly over the baked crust.
- In a small saucepan, combine rhubarb, 1/4 cup sugar, and cornstarch. Cook over medium heat, stirring frequently, until the mixture thickens and the rhubarb softens, about 5–7 minutes. Let cool slightly.
- Spoon the rhubarb mixture evenly over the cheesecake layer.
- Bake for an additional 25–30 minutes, or until the cheesecake layer is set.
- Cool completely, then refrigerate for at least 2 hours before slicing into bars.
Notes
- For a sweeter topping, add an extra tablespoon of sugar to the rhubarb.
- These bars can be made a day ahead and stored in the refrigerator.
- Try mixing in strawberries with the rhubarb for a twist on the flavor.
