For the French Onions:

  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • Salt and pepper, to taste
  • 1 teaspoon sugar (optional, for caramelizing)

For the French Fries:

  • 3–4 large russet potatoes, peeled and cut into thin fries
  • 3 tablespoons olive oil (or vegetable oil for frying)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the French Fries:
    Preheat your oven to 425Β°F (220Β°C). Toss the cut potatoes with olive oil, salt, and pepper. Arrange the fries in a single layer on a baking sheet and bake for 25-30 minutes, turning halfway through until golden brown and crispy. For extra crispiness, finish under the broiler for 2-3 minutes. Alternatively, fry them in hot oil (375Β°F/190Β°C) until crispy, about 4-5 minutes per batch. Drain on paper towels and season immediately with salt.
  • Caramelize the French Onions:
    Heat butter and olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes until golden brown and caramelized. Season with salt, pepper, and a teaspoon of sugar (if using) to enhance caramelization. Stir in balsamic vinegar (optional) to deepen the flavor. Set aside.
  • Cook the Ribeye Steaks:
    Preheat a cast-iron skillet over high heat. Pat the ribeye steaks dry with paper towels and season generously with salt and pepper on both sides. Add olive oil to the hot skillet and sear the steaks for 3-4 minutes per side for medium-rare (adjust cooking time for your preferred doneness). Add the minced garlic, rosemary, and butter during the last minute of cooking, basting the steaks with the melted butter. Remove the steaks from the skillet and let them rest for 5 minutes to lock in the juices.
  • Serve:
    Plate the ribeye steaks alongside the caramelized onions and crispy French fries. Garnish with freshly chopped parsley on the fries for a pop of color. Serve with your favorite steak sauce or garlic aioli for dipping the fries.
