A quick and healthy snack combining the crunch of rice cakes with creamy peanut butter, fresh banana slices, and a rich chocolate drizzle. Perfect for satisfying sweet cravings!
Ingredients
Scale
- 3 rice cakes (plain or lightly salted)
- 3 tablespoons peanut butter (or any nut butter)
- 1 banana, sliced
- ΒΌ cup dark or milk chocolate chips (for melting)
- 1 teaspoon coconut oil (optional, for a smoother chocolate drizzle)
Instructions
- Prepare the Toppings: Spread a tablespoon of peanut butter evenly on each rice cake.
- Add the Banana Slices: Slice the banana into thin rounds and place the slices on top of the peanut butter-covered rice cakes.
- Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips in 20-30 second intervals, stirring in between, until smooth. Add a teaspoon of coconut oil for a smoother drizzle, if desired.
- Drizzle the Chocolate: Using a spoon or a small piping bag, drizzle the melted chocolate over the banana slices and peanut butter.
- Chill or Serve: You can enjoy the rice cakes immediately or place them in the refrigerator for 10-15 minutes to allow the chocolate to harden.
Notes
For added flavor, you can sprinkle some sea salt on top before the chocolate hardens.
