These adorable Rice Krispie Christmas Puddings are a festive treat that everyone will love! Made with a combination of milk chocolate, white chocolate, and mini marshmallows, these treats are both delicious and fun to make. Decorated with sugarpaste holly leaves and berries, they make a perfect addition to your holiday celebrations.

- 200 g milk chocolate
- 50 g unsalted butter
- 180 g mini marshmallows
- 100 g Rice Krispies (or Coco Pops)
- 50 g white chocolate
- White sugarpaste (or pre-colored sugarpaste)
- Green food coloring gel
- Red food coloring gel

- Piping bag or freezer bag
Instructions
- Make the Rice Krispie Puddings:
In a saucepan, melt the milk chocolate and butter over low to medium heat. Add the mini marshmallows and stir gently until fully melted and combined.
Alternative Method: Melt chocolate and butter in the microwave. Add marshmallows and microwave for 30 seconds, stirring until melted.
Place the Rice Krispies in a large mixing bowl. Pour the melted chocolate mixture over the Rice Krispies and stir until fully coated. Allow the mixture to cool slightly.
Using a tablespoon, divide the mixture into equal portions and roll into pudding-sized balls.
Tip: Dampen your hands slightly to prevent sticking.
Place the balls on a baking tray lined with parchment paper and chill in the fridge for 30 minutes. - Make the Decorations:
Melt the white chocolate in a heatproof bowl over a saucepan of simmering water (do not let the bowl touch the water). Alternatively, melt in the microwave.
Place the melted white chocolate in a piping bag or freezer bag and set aside to cool slightly.
Use food coloring gels to color sugarpaste:- Green for holly leaves (cut out shapes using the holly leaf cutter).
- Red for rolling into small balls to create berries.
- Assemble the Christmas Puddings:
Once the puddings are chilled, snip the tip of the piping bag and drizzle the white chocolate over the top of each pudding.
Decorate each pudding with the sugarpaste holly leaves and berries while the white chocolate is still soft.
Notes
- These Rice Krispie Christmas Puddings can be stored in an airtight container for up to 2 weeks.
- You can substitute pre-colored sugarpaste if you prefer to avoid coloring the sugarpaste yourself.
- If you don’t have a holly leaf cutter, you can also cut the leaves by hand or use other shapes for decoration.
