Description

These irresistible cookies combine the perfect balance of salty and sweet with Ritz crackers, gooey marshmallows, chocolate, and a golden cookie base. The result is a s’mores-inspired treat that’s easy to make and absolutely delicious.


Ingredients

  • 1 package Ritz crackers (about 30 crackers)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Place the Ritz crackers in a single layer on the prepared baking sheet.
  3. In a small bowl, combine the melted butter, brown sugar, vanilla extract, and salt. Stir until the sugar is dissolved.
  4. Drizzle the butter-sugar mixture evenly over the crackers, making sure each cracker gets coated.
  5. Sprinkle the mini chocolate chips evenly over the crackers, then bake in the preheated oven for 8-10 minutes, or until the chocolate chips are slightly melted and bubbly.
  6. Remove from the oven and immediately top each cookie with a few mini marshmallows. Return the baking sheet to the oven and bake for another 1-2 minutes, until the marshmallows are soft and starting to brown.
  7. Allow the cookies to cool slightly before transferring them to a cooling rack. Serve warm or at room temperature.

Notes

  • If you prefer a crunchier cookie, bake for an extra 2-3 minutes at the beginning to crisp up the crackers before adding the chocolate and marshmallows.
  • You can also drizzle a little extra melted chocolate on top for an added treat.
  • For a more decadent version, add some peanut butter or crushed graham crackers before baking.
