- 4 medium artichokes
- 1/4 cup olive oil
- 1/4 cup unsalted butter, melted
- 4 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Trim the artichokes by cutting off the top 1-2 inches of the artichoke and removing the tough outer leaves. Cut off the stem so they can sit flat.
- Using a spoon, scoop out the fuzzy choke from the center of each artichoke. Rub the cut edges with lemon juice to prevent browning.
- In a small bowl, mix together the melted butter, olive oil, minced garlic, salt, pepper, and red pepper flakes, if using.
- Place the artichokes on the prepared baking sheet and drizzle with the garlic butter mixture, making sure to coat them evenly, including the centers.
- Cover the artichokes loosely with aluminum foil and roast for 40 minutes. After 40 minutes, remove the foil and continue roasting for another 15–20 minutes, or until the artichokes are tender and the leaves pull away easily.
- Once roasted, sprinkle with grated Parmesan cheese, if desired, and serve with extra lemon wedges and garlic butter for dipping.
Notes
- To check if the artichokes are done, pull a leaf from the center. If it comes off easily, the artichokes are ready.
- These artichokes pair wonderfully with grilled meats or seafood.
- You can store leftover roasted artichokes in the fridge for up to 2 days. Reheat in the oven for best results.
- If you’re short on time, you can steam the artichokes instead of roasting them, but the roasting brings out the best flavor.
