- 3 medium-sized beets, peeled and diced
- 1 cup granulated sugar
- 1/2 cup water
- 2 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1/4 tsp salt
- 1/2 tsp ground ginger (optional for extra warmth)
- 1 tbsp grated orange zest (optional for a citrus twist)
Instructions
- Roast the Beets: Preheat your oven to 400°F (200°C). Place the diced beets on a baking sheet lined with parchment paper and roast for 25-30 minutes, or until they are tender and easily pierced with a fork. Allow them to cool slightly.
- Cook the Jam: Once the beets are roasted, transfer them to a saucepan. Add the sugar, water, lemon juice, apple cider vinegar, and salt. Bring to a boil over medium-high heat, then reduce to a simmer.
- Simmer and Mash: Simmer the mixture for 20-30 minutes, stirring occasionally, until the beets break down and the mixture thickens to a jam-like consistency. If you prefer a smoother texture, use an immersion blender to purée the mixture.
- Add Spices: Stir in the ground ginger and orange zest (if using). Continue simmering for an additional 5 minutes, allowing the flavors to meld together.
- Jar the Jam: Once the jam reaches your desired thickness, remove it from the heat. Let it cool slightly before transferring it to sterilized jars. Seal the jars and let them cool completely at room temperature.
- Serve: Store the jam in the refrigerator for up to 3 weeks. Enjoy on toast, with cheese, or as a topping for meats and roasted vegetables.
Notes
- If you prefer a smoother texture, you can purée the beets before cooking them.
- The jam will continue to thicken as it cools, so don’t worry if it’s slightly runny when you first remove it from the heat.
- For a spicier kick, add a pinch of cayenne pepper or cinnamon during the simmering process.
