Description

Roasted Cabbage with Creamy Yogurt Sauce is a simple yet flavorful dish that turns a humble vegetable into a showstopper. The roasted cabbage gets caramelized and tender, bringing out its natural sweetness, while the creamy yogurt sauce adds a tangy contrast, making this dish both savory and satisfying. It’s the perfect healthy side dish for any meal!

Ingredients

Scale

For the Roasted Cabbage:

  • 1 medium head of green cabbage, cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon smoked paprika (optional)

For the Creamy Yogurt Sauce:

  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the Cabbage:
    • Cut the cabbage into wedges, making sure to keep the core intact so the wedges hold together during roasting.
    • Arrange the cabbage wedges on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and smoked paprika (if using). Rub the seasonings into the cabbage to ensure it’s well coated.
  3. Roast the Cabbage:
    • Roast the cabbage in the preheated oven for 30-35 minutes, flipping the wedges halfway through, until the edges are crispy and caramelized, and the cabbage is tender.
  4. Make the Yogurt Sauce:
    • While the cabbage roasts, whisk together the Greek yogurt, lemon juice, olive oil, Dijon mustard, garlic powder, salt, and pepper in a small bowl until smooth and creamy.
  5. Serve:
    • Once the cabbage is roasted, remove it from the oven and place it on a serving platter.
    • Drizzle the creamy yogurt sauce over the roasted cabbage, and garnish with fresh parsley if desired.
  6. Enjoy:
    • Serve immediately as a healthy side dish or light vegetarian main course.

Notes

  • You can also try adding a little heat to the yogurt sauce by mixing in some hot sauce or cayenne pepper.
  • For a more complex flavor, you can sprinkle the cabbage with grated Parmesan cheese or a squeeze of fresh lemon juice before serving.
  • This dish pairs wonderfully with grilled meats or as part of a plant-based meal.
