Description

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 tablespoon maple syrup or honey (optional)
  • Fresh herbs (like parsley or thyme) for garnish

Instructions

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • Wash the delicata squash thoroughly. Slice off the ends, cut in half lengthwise, scoop out seeds, and slice into 1/2-inch thick half-moons.
  • Place the squash in a large bowl, drizzle with olive oil, and toss to coat. Add salt, pepper, and cinnamon (if using), and toss again.
  • Spread the squash in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway, until golden brown and tender.
  • For an optional sweet glaze, drizzle with maple syrup or honey in the last 5 minutes of roasting.
  • Garnish with fresh herbs and serve hot.
