Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Wash the delicata squash thoroughly. Slice off the ends, cut in half lengthwise, scoop out seeds, and slice into 1/2-inch thick half-moons.
- Place the squash in a large bowl, drizzle with olive oil, and toss to coat. Add salt, pepper, and cinnamon (if using), and toss again.
- Spread the squash in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway, until golden brown and tender.
- For an optional sweet glaze, drizzle with maple syrup or honey in the last 5 minutes of roasting.
