Description

Crispy roasted potatoes tossed in a rich garlic butter and parmesan mixture, perfect as a side dish or snack. These golden, flavorful potatoes are easy to make and irresistibly delicious.


Ingredients

  • 2 lbs baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the melted butter, minced garlic, olive oil, thyme, oregano, salt, and pepper.
  • Toss the halved potatoes in the garlic butter mixture until well-coated.
  • Spread the potatoes in a single layer on the prepared baking sheet, cut side down for extra crispiness.
  • Roast for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges.
  • Remove from the oven and sprinkle the grated Parmesan cheese evenly over the hot potatoes. Toss to combine.
  • Garnish with fresh parsley before serving.

Notes

For extra flavor, consider adding some crushed red pepper flakes for a bit of heat.
