- 2 lbs baby potatoes, halved
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the melted butter, minced garlic, olive oil, thyme, oregano, salt, and pepper.
- Toss the halved potatoes in the garlic butter mixture until well-coated.
- Spread the potatoes in a single layer on the prepared baking sheet, cut side down for extra crispiness.
- Roast for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges.
- Remove from the oven and sprinkle the grated Parmesan cheese evenly over the hot potatoes. Toss to combine.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, consider adding some crushed red pepper flakes for a bit of heat.
